While opening an old bottle remains a very exciting time for all wine lovers, there are a number of precautions that should be taken to ensure that it reaches the best of itself in the glass of your guests.
Opening is a delicate moment, because old corks are fragile, so it is essential to have a good corkscrew and to operate very gently. Once the bottle is open, taste the wine to judge if it’s necessary to put it in a carafe. It is always risky to open a very old wine in advance, an hour before serving seems sufficient.
